Replacing eggs can be one of the hardest things about baking.  What replaces an egg?  More than you could have imagined!!  Here are some ideas when it comes to replacing your eggs but keep in mind, you may need to experiment.  Some things work better than others for certain recipes.  If the replacement you tried doesn’t give you the exact results you want, try a different one next time. 

Eggs have multiple uses in recipes.  The first trick is figuring out what the egg you want to replace does.  They may be used for binding in things such as casseroles, burger patties, meatballs, and such.  The binding eggs hold you recipe together.  Egg may be used as a leavening agent making your recipe lighter, fluffier, and moist.  This is the case with eggs in most baked goods.  Lastly, they may be used for taste like in quiches or or breakfast casseroles.

On a side note, the less eggs a recipe has, the easier it will be to substitute.

I would like to mention that while some people are unable to eat chicken eggs, they may do okay with duck eggs.  I am very excited to try these this spring and will report back with how our family does.  You can get duck eggs from local farmers and some natural food stores.
