Recipe: Apple Chicken Salad

Ingredients

  • 3 chicken breast, cooked and cubed
  • 1 medium apple, diced
  • 1/4 cup crushed or sliced almonds
  • 2 Tbsp balsamic vinegar
  • 2 Tbsp olive oil
  • Salad greens
  • salt and pepper to taste

Instructions

  1. Mix chicken, apple, and almonds in a medium bowl.
  2. Mix vinegar and oil together.
  3. Serve over salad greens dressed with vinegar and oil mixture.

    When your recipe says “3 chicken breast, cooked and cubed,” do you mean 3 ounces, 3 pounds, or 3 chicken breasts? I’m looking at doing the Whole 30 challenge and really appreciate that you have posted week-long menus and recipes. Thanks!

    snagged this recipe and the menu for the week to try and nudge my kiddos toward a Whole30 starting March 1. Sounds delish! Wish us luck. The kids are my main trouble spot since I need things to pack in their lunches and for snacks….

    Onthe whole 30…How much fruit do you eat or can eat per day? I am confused becasue of the sugar in them…although it’s good sugar.
