There is no cheese but it isn&#8217;t missing it.  It is also very easy to prepare other then the handling of the raw chicken.  Have I ever mentioned on here that I am not a fan of raw meat.  Good thing I like cooked meat enough to make it seem worth while.</p>

<li>Filet open each chicken breast making sure not to cut all the way in half.</li>
<li>Wrap two asparagus in two pieces of ham while placing approx a teaspoon of coconut oil inside each roll.</li>
<li>Place roll inside chicken breast.</li>
<li>Put all the finished chicken breast inside an oven safe pan.</li>
<li>Season tops with salt and pepper.</li>
<li>Bake at 350 degrees for 40 minutes or until chicken is no longer pink.</li>

<li class="ingredient">1 cup bean sprouts (Can use canned chow mein veggies)</li>
<li class="ingredient">1/2 cup finely diced mushrooms</li>
<li class="ingredient">1 cup chicken, cooked and finely chopped</li>
<li class="ingredient">1 tsp salt</li>
<li class="ingredient">1/2 tsp pepper</li>
</ul>
<p><strong>Sauce</strong></p>
<ul class="ingredients">
<li class="ingredient">1-1/2 cups chicken broth</li>
<li class="ingredient">2 Tbsp coconut aminos or gluten free soy sauce</li>
<li class="ingredient">6 Tbsp cold water</li>
<li class="ingredient">2 Tbsp arrowroot or cornstarch</li>
</ul>

<li>Quickly sauté celery, mushrooms, onion, and bean sprouts. Remove from heat and allow to cool.</li>
<li>While veggies are cooling, make sauce.</li>
<li>Pour broth and aminos into a small saucepan. Heat until simmering.</li>
<li>Add arrowroot and cold water mixture into pan. Stir until thickened and smooth.</li>
<li>When sauce is finished, beat eggs and mix in veggies, chicken, salt and pepper.</li>
<li>Heat oil in a medium skillet and brown egg mixture on each side 1/3 cup at a time.</li>
<li>Serve with Sauce.</li>

The kids were thrilled to have chicken strips as I don&#8217;t think I have ever made them at home before even when we were eating a SAD diet.  I chose to make them two different ways as I thought the kids might like the plain and we might like the coconut crusted.  Turns out the kids liked both and so did we but our preferences were as I had thought.  I hope you are able to enjoy these as much as we did.</p>

I could and do eat carrots, onions, and peppers every day but I know that I am missing some great nutrient powerhouses.  Squash is something that I have tried many different ways and never really had a taste for.  It isn&#8217;t bad but I wouldn&#8217;t go for an extra helping.  Even smothered in butter and brown sugar, it just hasn&#8217;t drawn me in.</p>
<p>But I was determined this time.  I wanted to like it and I wanted to want it again.  I created a recipe that even curbs a little of the sweet tooth that was creeping in today.  I ate seconds and thirds.</p>

<li>Cook for 15 more minutes or until squash is tender.</li>

			<content:encoded><![CDATA[<p>I am an admitted meatloaf hater.  I never liked it and was always kind of grossed out by it.  I don&#8217;t know why, I just was.  So when my wonderful mother-in-law brought meatloaf to me in bed the day after Dresdan was born, I was not excited.  I mean come on.  I just pushed a baby out 24 hours ago and you want me to eat meatloaf.  (I can be a little ungrateful sometimes.  I&#8217;m not proud of it.)  I decided with enough ketchup, it would be fine.  Imagine my surprise when I tasted and loved it.  How could that be?  I wanted seconds and thirds.  It was so tasty.  I thanked my mother-on-law profusely and asked for the recipe.  Who would have known it was so easy!?!  I have found that what I don&#8217;t like about meatloaves (Is that how you make meatloaf plural?) is the addition of bread crumbs.  It is a texture thing with me and besides when you aren&#8217;t eating grains, bread crumbs are a little tough.  Here is the recipe for the super, simple yet tasty meatloaf a la Lois:)</p>

<li class="ingredient">2 tsp ground black pepper</li>
<li class="ingredient">1/2 tsp garlic powder</li>
<li class="ingredient">1 cup finely diced chard, optional (I dice mine very small so it looks like a spice.)</li>
</ul>

<li>Mix beef, eggs, onions, spices, and chard. (I use my kitchen aid mixture because part of the meatloaf gross out was watching someone mix it with their hands and see it squish around between their fingers.  I don&#8217;t really like to squish raw meat.)</li>
<li>Push into 9&#215;9 pan.</li>
<li>Bake at 350 degrees for 1 hour or until cooked though.</li>

<li>Toss cauliflower with 2 Tbsp olive oil, salt, and pepper.</li>
<li>Place on a large cookie sheet with enough room to roast the florets evenly. Roast until florets begin to brown, about 20 minutes.</li>
<li> Meanwhile, sauté garlic in 1 Tbsp oil over low heat until garlic is soft and slightly translucent.</li>
<li>Place garlic in a dish and refrigerate to cool quickly (colder ingredients will emulsify more easily when creating sauces).</li>
<li>When garlic is cold, place in food processor and blend. Add 1/4 cup of oil to food processor.</li>
<li>As the oil emulsifies, continue to add the rest of oil slowly until only 1 Tbsp remains.</li>
<li>Add egg whites and remaining oil along with the salt. Blend to a smooth consistency. Do not over mix.</li>
<li>Remove cauliflower from oven once browned. Cover in garlic sauce or serve the sauce on the side as a dip.</li>

			<content:encoded><![CDATA[<p>Curry is such a great meal. Full of flavor and a little heat for those that want it. I wanted to make a really fast dinner and has some veggies to use. Curry was it. I&#8217;ve made enough curries that I decided to just go by feel for this one, make it simple, and see how it turned out. Here is the amazing result.</p>
<p>This recipe is super flexible. Use whatever veggies and meat you have on hand, use more curry paste for a spicier sauce, double the sauce if you like your curry more soupy or are using larger amounts of meat and veggies. The sky is the limit.<br />

<li class="ingredient">3-4 chicken breasts, diced</li>
<li class="ingredient">1 red pepper, thinly sliced</li>
<li class="ingredient">2 stalks celery, thinly sliced</li>
<li class="ingredient">5 carrots, thinly sliced</li>
<li class="ingredient">1 parsnip, thinly sliced</li>
<li class="ingredient">1 onion, thinly sliced</li>
<li class="ingredient">1 can coconut milk</li>
<li class="ingredient">1 Tbsp Fish Sauce</li>
<li class="ingredient">1/2-1-1/2 Tbsp Red Curry Paste (we used 1/2 Tbsp. Gave flavor but no heat)</li>

<li>Heat large skillet or wok to high heat. Add 2-3 Tbsp oil.</li>
<li>Add chicken and stir fry until on longer pink in the middle. Remove chicken.</li>
<li>Add another 2-3 Tbsp oil. Add all veggies and stir fry until crisp tender.</li>
<li>Mix fish sauce and curry paste into coconut milk.</li>
<li>Add chicken back in the pan with veggies and pour in the sauce mixture.</li>
<li>Heat until sauce is warm. Serve!!</li>

<p>Well it has been awhile since I have posted a recipe.  But I am back . I think I left you by saying I would be back with a post on how we are eating now.  We have been experimenting over the last few months and we all feel better when we are gluten and dairy free.  However we feel the best when we are eating <a href="http://robbwolf.com/faq/">Paleo/Primal</a>.  We are doing the <a href="http://whole9life.com/2012/01/whole-30-v2012/">Whole 30</a> now to start our year out right so there will be daily posts on <a href="http://www.napclan.com">NapClan.com</a>.  Each day will have daily pictures of what we are eating and links to all the recipes I am using.  In order to have links for the recipes I am using, I am going to have to post the recipes.  That means you all are in luck.</p>
<p>If you are here because you are looking for gluten, dairy, and egg free recipes, you may wonder what I am talking about.  Don&#8217;t worry almost all the recipes will still work for you.  All new recipes will all be gluten (all grain actually) and dairy free but there could be a few egg recipes here and there.  Don&#8217;t be worried all my old recipes are still here including <a href="http://www.icookfree.com/cook/desserts/best-chocolate-cupcakes-ever/">the infamous chocolate cupcakes</a> as I feel that there is a huge need.  When we are not eating Whole30, we need to have access to certain baked goods and chocolate for special occasions.  What you may be surprised to learn is the amazing things you can do without any grains at all.  I can&#8217;t wait to share them with you.</p>

			<content:encoded><![CDATA[<p>I have had a few of you ask me what kind of allergy testing we do.  I thought I would share the specifics so you can ask for it as well.  It is a FoodStats Antibody Assessment by US BioTek Laboratories.  The test looks for IgE and IgG antibody types.  The finger poke tests only for IgG antibodies while a full blood draw is required to test for the IgE antibodies.  You can go to their <a href="http://www.usbiotek.com/Services_antibody-Assessment-Panels.php">website</a> for more detailed information about what those antibodies are and what they do. </p>
<p>You can also go to <a href="http://www.drbizzy.com/">Dr. Bizzy&#8217;s website</a> for more information about naturopathic care.  I recommend her to all my friends that are looking for a fantastic practitioner in the greater Seattle area.  It is refreshing to have a practitioner that takes time to know you and your family.  I am also a huge proponate of learning how to heal our bodies naturally not just mask the symptoms we may be having.  <a href="http://www.drbizzy.com/content/about/about.asp">Naturopathic care</a> is covered by most insurances and can set you on a course to a much healthier life. </p>
<p>Food antibody testing is a great example of this.  With Logan&#8217;s symptoms (you can read about her reactions <a href="http://www.icookfree.com/cook/about/my-journey">here</a>), most western medicine practitioners would have suggested seeing an ENT.  This would have led to possible removal of tonsils and adnoids and probable placement of ear tubes.  We would have been just masking the real issue and continuing the damage to her gut. </p>
<p>I just spoke with a friend that fought with stomach pain for years and was told it was just Irritable Bowel Syndrome or IBS.  She refused to accept that diagnosis and after much research and years of pain she was tested for food intolerances.  Guess what she found.  She had problems with many of the same foods that Logan does plus a few more.  If she keeps those foods out of her diet, she is pain free.  Yet a traditional doctor never thought to check for this and just wanted to mask her symptoms with medication. </p>
<p>Now before you jump on me, I know there are many good MD&#8217;s out there and we have gone to a few that we love.  They just have a difference in training and philosophy.  Was I glad there was an MD available when I needed an emergency surgery 6 years ago or when Than ruptured his achilles tendon two year age?  Absolutely.  I am extremely grateful for western medicine.  I just feel that we should start be learning how to heal ourselves naturally before adding or doing anything synthetic or invasive.   </p>
<p>All of that to say if you are having any sort of reaccuring health issues, they could be food related.  We have seen reactions that range from the usual stomach upset, to mucus issues and even anxiety and behavioral issues change dramatically with changes in diet.  It is just a simple blood test that could change the way you feel and/or act.  While I am definitely not a doctor, I think it would be worth it for everyone.   Who knows what you might learn!?!</p>
<p>And remember no matter what the results, you have support here from myself and others that read this blog.  Ask your questions or express your frustrations as you change your diet.  We want to listen and help in anyway we can.</p>
