Turkey & Sweet Potato Soup

We love this soup.  I was super hesitant to put in the nut butter.  It tasted great without it and I am a whimp when it comes to things out of my comfort zone.  I am learning that much of this comes from my childhood of meat and potatoes  and I have decided that I will not let that stop me anymore.  Mind over matter.  So I did it, I added the nut butter and it made the dish 10 times better.  Don’t let your fear of weird keep you from trying this soup.  It is fantastic!!!

Recipe: Turkey & Sweet Potato Soup

Ingredients

  • 2 Tbsp coconut oil
  • 2 onions, sliced
  • 1 lb ground turkey
  • 1 Tbsp curry powder
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp cayenne pepper
  • 2 cloves garlic, pressed
  • 2lbs sweet potatoes, peeled and cubed
  • 2 cups chicken stock
  • 2 cans diced tomatoes
  • 1/2 cup nut butter (sunbutter, almond, or peanut)
  • 1/2 cup coconut milk

Instructions

  1. In a large soup pot, melt coconut oil over medium-high heat.
  2. Add onions and turkey. Cook until no longer pink.
  3. Add swwet potatos, stock and tomatoes.
  4. Bring to a boil, cover, and simmer for 30 minutes.
  5. Add remaining ingredients and stir thoroughly.
  6. Return to a simmer and cook for 20 minutes.

Mexican Crock Pot Stew

Here is another fun recipe to make during The Whole 30 Challenge.  It doesn’t have to be just grilled meat and salad.

Recipe: Mexican Crock Pot Stew

Ingredients

  • 3lbs meat, cubed (Can use pork loin or chop, or chicken breast)
  • 4 Tbsp Coconut Oil
  • 3 14oz cans diced green chilies
  • 2 cup chicken stock
  • 3 sweet potatos, peeled and cubed
  • 2 onions, diced
  • 3 cans diced tomatoes
  • 2 tsp salt
  • 1 tsp cumin
  • 1/2 tsp pepper
  • Juice from 1 fresh lime
  • Avocado

Instructions

  1. Combine all ingredients in crock pot except lime juice.
  2. Cover and cook on low for 6-7 hours.
  3. Add lime juice, stir well, and serve with a salad and topped with avocado.

Paleo Chili

We love chili in the fall.  At first I thought chili was out this month as we are doing The Whole 30 Challenge and that meant no beans.  I decided to give it a try anyway minus the beans and it was a success.  I hope you enjoy it as much as we did.

Recipe: Paleo Chili

Ingredients

  • 2 lbs ground turkey
  • 2 carrots, diced
  • 2 zucchini, diced
  • 1 medium onion, diced
  • 3 stalks celery, diced
  • 2 cans tomato sauce
  • 1 can diced tomatoes
  • 2 cans tomato paste
  • 2 cups chicken broth
  • 1/4 cup chili powder
  • 2 Tbsp salt

Instructions

  1. In a large pan, brown turkey until no longer pink. Drain excess grease.
  2. Add diced veggies and cook until onion are becoming translucent. (You may be able to just add them in if you are letting the chili sit on the stove for a few hours but we were in a hurry to get it done)
  3. Add the rest of the ingredients and stir well.
  4. Bring to a boil and then turn down to a simmer.
  5. Cover and cook for 1-2 hours for best results. (It is good almost right away if you already cooked the veggies though.)
