Paleo “Cookies” – No-Sweetener Added

I found the bones of this recipe from Lillian’s Test Kitchen and for that I am very grateful. As I started making them, things just started flowing and I came up with my own concoction that not only tastes great, offers multiple variety, and are not just a sweet carby sub for a regular cookie but are good during my Whole 30 Challenge. These “cookies” are super tasty and great to have on the counters for kids. Each cookie has approximately 2g protein, 2g carbs, and 2g of good healthy fats. You don’t have to worry about a big sugar rush by using these as a quick to grab snack. Enjoy!!!

Recipe: Paleo “Cookies”

Ingredients

  • 2 peeled Bananas
  • 1 peeled and sliced Apple
  • 1/2 cup Almond Butter
  • 3 Tbsp Palm Shortening
  • 1 tsp Vanilla Extract
  • 1 1/2 cups Blanched Almond Flour
  • 1/2 cup Shredded Unsweetened Coconut
  • 1 tsp Baking Soda
  • 1/2 tsp Celtic Sea Salt
  • 1/2 tsp Cinnamon
  • 1/2 cup Unsweetened Cocoa Powder (optional)
  • 1/2 cup Enjoy Life Chocolate Chips (optional)

Instructions

  1. Preheat oven to 350 degrees F.
  2. Puree the bananas and apple in a blender or food processor.
  3. Add the almond butter, shortening and vanilla extract to the processor.
  4. In a separate bowl mix the almond flour, baking soda, cinnamon, salt and coconut. This is where you would add in cocoa powder as well.
  5. Combine the dry and wet ingredients until well mixed.
  6. Add chocolate chips and fold in if desired.
  7. Drop Tbsp size balls on the parchment paper lined or well greased cookie sheet.
  8. Bake for 10-12 minutes.

Sweet Potato and Sausage Hash

Was I ever skeptical about this recipe!?!  Let me lay out my reasons for you.  First, I’m not a big fan of sausage.  Call me crazy but it’s not my favorite thing.  Second, I view cinnamon as a spice that goes with sugar.  Why then did I try this recipe you might ask?  Again two reasons.  First, we started The Whole 30 Challenge yesterday which means breakfasts are a little difficult and  I need to be incorporating veggies at every meal.  Second, my husband loves sausage and I love him. 

Since the cinnamon goes in last, I had a chance to try it without and then sample a small portion with it.  I’m now a believer in cinnamon, sweet potatoes, and sausage.  Who would have guessed.  Thanks to www.everydaypaleo.com for this wonderful breakfast idea.  Now without further ado…

Recipe: Sweet Potato and Sausage Hash

Ingredients

  • 1 lb ground pork sausage (We like Isernio’s mild italian)
  • 3 sweet potatoes, grated
  • 3 tbsp coconut oil
  • 2 tsp cinnamon (or more if it is to your liking)

Instructions

  1. Brown the sausage in a large skillet.  
  2. Add the coconut oil and shredded sweet potatoes to the cooked sausage.
  3. Stirring often, let the potatoes cook until they are soft, about 7 minutes.  
  4. Add cinnamon and serve.
